Yield: 6 enchiladas


Ingredients:


* 2 cups cooked shredded chicken

* 1 1/2 cups shredded Monterey Jack or cheddar cheese (divided)

* 1 can (10 oz) diced green chiles

* 1 can (15 oz) green enchilada sauce

* 6 small flour or corn tortillas

* 1/4 cup sour cream (optional for filling)

* 1/2 tsp cumin

* Salt and pepper to taste

* Fresh cilantro, chopped (for garnish)


Instructions:


1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

2. In a bowl, mix chicken, 1 cup cheese, green chiles, sour cream, cumin, salt, and pepper.

3. Spoon filling into tortillas, roll tightly, and place seam-side down in the baking dish.

4. Pour green enchilada sauce evenly over the top, then sprinkle with remaining cheese.

5. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.

6. Garnish with chopped cilantro and serve hot.
