Dill Pickle Ranch Smash Chicken Cutlets
I made these on a night when dinner needed to feel familiar and dependable. The dill pickle flavor stays bright while the ranch coating crisps in the oven. They’re simple and always disappear fast.
Ingredients:
• 2 large chicken breasts, smashed thin
• 2 eggs
• 1 cup breadcrumbs
• 1 packet ranch seasoning
• 1/4 cup finely chopped dill pickles
Methods:
Preheat oven to 425 F and line a baking sheet.
Beat eggs in a shallow bowl.
Mix breadcrumbs and ranch seasoning.
Dip chicken into egg, then coat fully.
Press pickles lightly into the coating.
Bake 18 to 22 minutes until golden.
Rest briefly before serving.
