π Chicken Marsala
Ingredients:
* 2 large chicken breasts (cut into 4 thin pieces)
* 1/4 cup plain/all‑purpose flour
* 1/2 tsp salt
* 1/2 tsp black pepper
* 2 tbsp extra‑virgin olive oil
* 2 tbsp unsalted butter
* 2 eschalots or shallots, finely chopped
* 1 garlic clove, minced
* 2 cups sliced white mushrooms
* 1 cup dry Marsala wine
* 1/2 cup chicken stock/broth
* 1/2 cup heavy/thickened cream
* 1 tbsp finely chopped parsley (optional garnish)
Instructions:
1. Pound chicken pieces to even thickness and season with salt and pepper.
2. Dredge each piece lightly in flour, shaking off excess.
3. Heat olive oil and 1 tbsp butter in a pan over medium‑high heat; cook chicken until golden and cooked through, then remove to a plate.
4. Add remaining butter, shallots and garlic to the pan; sautΓ© until soft.
5. Add mushrooms and cook until they release liquid and soften.
6. Pour in Marsala wine and chicken stock; simmer until sauce reduces slightly.
7. Stir in cream and simmer until sauce thickens to a creamy consistency.
8. Return chicken to the pan to warm through.
9. Sprinkle with parsley before serving.
